Fall Festival Recipe Exchange

My Friend Amy had a terrific idea -- a Fall Festival Recipe Exchange! Like Amy, fall is my favorite time of the year. I just love back-to-school shopping, cooler weather, football season, and especially all of the yummy fall foods. As I went though my cookbooks, I discovered that I have so many great fall recipes that it was difficult to pick just a few. Here are some of my favorites:

Cranberry Nut Bread

2 Tbsp. butter, melted
grated rind and juice of one orange
boiling water
2 cups flour
1 egg
1 cup sugar
1 1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt

1 cup raw whole cranberries
1 cup chopped walnuts

Mix melted butter, orange rind, and orange juice together to make 3/4 cup liquid. Add boiling water if necessary to get 3/4 cup. Cool. Add beaten egg to cooled liquid.

In a separate bowl, mix together remaining ingredients and add liquid last. Put in a greased loaf pan and bake for one hour at 325 degrees.

Pumpkin Dip

4 c. powdered sugar
2 (8 oz.) pkgs. cream cheese
1 can (30 oz.) pumpkin pie filling
2 tsp. cinnamon
1 tsp. ginger

Combine sugar and softened cream cheese until well blended. Beat in remaining ingredients. Store in airtight container in the refrigerator. Serve with gingersnaps and apple slices.

Cranberry Sauce Chicken

8 boneless
garlic powder
1 (8 ounce) bottle Russian dressing
1 (2 ounce) envelope dry onion soup mix
1 (16 ounce) can whole berry cranberry sauce
1/2 cup water

Place the chicken breasts in a greased baking dish and sprinkle them lightly with garlic powder. Combine the Russian dressing, dry onion soup mix, cranberry sauce, and water; pour the mixture over the chicken. Bake for 1 hour at 350 degrees, basting occasionally.

Pumpkin Pie Crunch

1 can (15 oz) pumpkin (not pumpkin pie mix)
1 can (12 oz) evaporated milk
3 eggs
1 cup sugar
4 tsp pumpkin pie spice
1 pkg supermoist white cake mix
1 1/2 cups chopped pecans
3/4 cup butter, melted

Heat oven to 350 degrees. Grease bottom and sides of 13x9x2 in pan.

Stir pumpkin, milk, eggs, sugar, and pumpkin pie spice until smooth. Pour into pan. Sprinkle cake mix over pumpkin mixture. Sprinkle with pecans. Pour melted butter evenly over top.

Bake 50-60 minutes or until knife inserted in center comes out clean. Cool completely, about 1 hour 30 minutes. Store covered in the refrigerator.

I must check back at these posts about fall recipes this evening when I have more time and I can cut and paste. I'm imagining what a fantastic Thanksgiving I could have this year!

*drool* Cranberry Nut Bread? Pumpkin Dip? Chicken and Pumpkin Pie Crunch?

OMG I am so hungry. And will definitely make the bread. And the dip. And the chicken. And probably the Pumpkin Pie Crunch too! Yay for fall!

Here is a recipe that I make every year in the fall:

Halloween Popcorn Mix

1 package Almond Bark (1 lb)
12 C popped popcorn (about 1/2 C kernals)
1 C candy corn
1 C dry roasted, salted peanuts
1/2 C Reeces Pieces

Pop popcorn and place in a VERY large bowl. Place the candy corn, peanuts and Reeces Pieces on top.
Melt the almond bark according to the package directions and pour over all the ingredients in the bowl. Stir really well and then put the mixture on wax paper or parchment paper and let it dry out. Break it up when its ready and ENJOY!!!

Get that cranberry bread and pumpkin crunch cake ready ... I'll bring the coffee (it will take me about 5 hours to drive there, I think!)
